Chocolate Orange Shortbread Delight!
Plain flour 800g
Cocoa powder 8 tablespoons
Caster sugar 255 g
Butter 525 g
Chocolate chips 400g
Orange Mousse Ingredients
500 ml double cream
400g dark chocolate
100g white chocolate
2 orange zest and juiced
Method for Shortbread: Place the butter and Caster sugar into a blender and cream together, add the Cocoa powder and flour on slow until blended evenly, place onto a board and mix in the chocolate chips by hand then divide into 2 even sections. Place in a baking tin and flatten. Repeat and place both into an oven 180 for 16 minutes then take out and leave to cool whilst making the filling.
Method for Filling: Pour the double cream in a pan to bring to the boil, place chocolate and orange in a bowl and when the cream comes to the boil pour over the top and mix till smooth and place in the fridge to chill. When cooled spread onto the bottom of the shortbread, place orange segments or orange slices on top and Sandwich together. Spread the remainder on the ready to garnish with sweets and marshmallows and flakes or just some seasonal fruit.
